Tasting notes: Dark, deep ruby color. Aromas of fresh plum, raspberry, cocoa powder, cinnamon and cloves and a touch of dried herbs and smoke. Bursting with bright berry flavors, vanilla cream, cocoa and cinnamon. The mid-palate and finish are lush and full but with just the right balance of tartness and astringency. Well integrated tannins that linger on the long finish.
Production notes: 65% merlot, 27% cab sauv-8% Syrah. This wine was cold soaked overnight then inoculated with yeast, fermented for 7-10 days on skins while being pumped over twice daily before pressing to barrels, where it underwent malo-lactic fermenation. It was 100% barrel aged for 21 months in 49% new oak, 21% French and 79% American.
